Description:
Mustard sauce which is good warm on warm fish, beef and ham. Also good cold on cold meat or fish sandwiches.

Ingredients:

1   Cup half and half or evaporated milk
1/4 Cup sugar
2   Tablespoons dry mustard
1   Tablespoon flour
1/4 Tespoon salt
1   Egg yolk beaten
1/4 Cup hot vinegar
Directions:
  1. Heat 3/4 cup milk over low heat.

  2. Mix sugar, mustard, flour and salt.

  3. Blend with remaining 1/4 cup milk.

  4. Pour over beaten egg yolk.

  5. Add some of heated milk to egg yolk mixture.

  6. Add mixture to balance of heated milk.

  7. Stir and cook until thickened.

  8. Remove from heat and stir in vinegar.

  9. Refrigerate any unused portion.
